Brew_Lab is an interactive coffee machine that brews flavours from three different futures, preparing us for what is to come.
Each brew is unique. The coffee’s aromatic profile shifts in real time, responding to live data from the coffee industry. Its constant variation reflects the industry’s volatility, offering a sensory glimpse into the impact of our daily consumption.
Brew_Lab presents a tasting experience of three futures - 2027, 2080, and 2126 - based on climate predictions and expert research from the Royal Botanic Gardens (Aaron Davis), Brazilian Coffee Research Centres, and NASA. This includes the resurgence of extinct, climate-resilient coffee species, as well as simulations exploring how taste perception changes in different environments.
